PB&J Energy Bites

Need a healthy way of keeping your energy up all day long? These ridiculously easy PB&J Snack Bites pack a powerful punch, and with just four simple ingredients, they come together fast! Perfect for popping in your purse or your kids’ lunch bags, these Energy Bites are just the thing to keep you going strong!

This incredibly simple snack recipe was born out of the necessity to bring nut-free, healthy food  items to school. Fortunately, my children do not go to a school that requires this, but I know so many of you do. Gone are the days of packing a simple peanut butter and jelly sandwich for lunch at many schools due to peanut allergies.

You will love the replacement of traditional peanut butter with the flavor and creaminess of SunButter, an alternative made from sunflower seeds. It’s amazing the varieties of products we have to choose from these days, isn’t it?

The jelly ingredient in these energy bites is replaced with dried strawberries. Feel free to use any dried fruit though. Strawberries just happen to be a favorite in our house!

PB&J Energy Bites

Here is what you need:

3 cups old-fashioned oatmeal
1/2 cup SunButter (or Peanut Butter if you prefer!)
1/2 cup honey
1 cup dried strawberries

Step 1: On a small cutting board, chop dried strawberries into small bits.

Step 2: Add all four ingredients to a large bowl.

Step 3: Stir until well combined.

Step 4: Take a spoonful of the energy bite mixture and form into a ball. You should end up with 25-30 balls or bites of energy. Store in the refrigerator or freezer

Recipe Notes: SunButter is made with sunflower seeds, and can replace traditional nut butter in recipes. If you prefer, you can use peanut butter or almond butter instead!

  • I live on energy bite made with chocolate chips but the chopped strawberries look like I great alternative. I know I eat way too much chocolate.

  • These look really good! I cannot wait to try them. Thanks for providing a recipe for an energy bite that is nut free. I had given up on little snacks like these when we found out that my youngest son is allergic to peanuts and tree nuts. I did find it a little hurtful to read that you stated that you were fortunate to not have your children in a nut free school. I have so many worries for when my little one goes to school and hope that he can be safe at school, after all food allergies are life threatening. I used to snack on a variety of nuts for a healthy and satisfying snack so I get it, but I also want my guy to be safe, especially in a learning environment such as a school. Hopefully my boys will like these, I can already tell that I will!
