It felt like such a chore, a burden on my time and energy. And once my husband Chuck left his job to be the stay-at-home dad in 2013, I was more than ready to wash my hands of the responsibility. I felt like it was now his job, not mine.⠀⠀⠀⠀⠀⠀⠀⠀

But he hated it too. He’s not a recipe follower or a planner by nature, so every single night, dinner was a struggle. I’d come home starving and ready to eat, and he’d act like it was somehow a big surprise that I was hungry, and we’d either get into a big fight about it, or end up just going out for dinner. Sometimes both.⠀⠀⠀⠀

But last year, as I committed to losing weight, and started following the Keto diet, something finally shifted in me. Maybe it was that I was no longer hangry, or that I stopped crashing in the afternoons. Whatever it was, I stopped looking at cooking as a chore and began relishing it as time to unwind and relax⠀⠀⠀⠀⠀⠀⠀⠀⠀

Instead of feeling like I HAVE to cook, I realized that I GET to cook.⠀⠀⠀⠀⠀⠀⠀⠀⠀

And these days my favorite part of the whole day is coming home from work, throwing on my apron, pouring myself a glass of wine, turning on some mellow music, and letting my creative juices flow in the kitchen. ⠀⠀⠀⠀⠀⠀⠀⠀⠀

Plus when I cook, my husband has to do the dishes!⠀⠀⠀⠀⠀⠀⠀⠀
It’s funny how reframing your perception, even just a little, from “I have to do this” to “I GET to do this” can make all the difference in the world.

Keto 101: What it is, How it Works, and How to Get Started

Pan Seared Shrimp with Cheesy Spinach and Cauliflower Rice

Here is what you need:

3 TBSP Ghee
1 shallot, minced
2/3 cup Heavy Cream
1 1/4 cups Parmesan cheese, shredded
4 cups spinach, chopped
1 bag frozen cauliflower rice
1 16oz bag Shrimp
1 TBSP Cajun Seasoning
black pepper to taste
Step 1: Mince shallot, set aside.
Step 2: Chop spinach with kitchen scissors, then set aside.
Step 3: Clean and de-vain shrimp, then add Cajun seasoning and let it sit.
Step 4: Melt 1 tablespoon ghee, then saute shallot and add spinach and cook until wilted. Remove from pan.
Step 5: Then add another tablespoon of ghee to pan and cook shrimp until lightly pink. 2-3 minutes.
Step 6: Remove from pan and set aside. Then add another tablespoon of ghee to pan, add heavy cream, then Parmesan cheese, add black pepper and mix until melted.
Step 7: Add spinach back to pan, then add shrimp.
Step 8: Cook cauliflower rice according to package directions. Plate cauliflower rice and add shrimp and cheesy spinach mixture on top and enjoy.

Ingredients
