This easy oyster pearl cookie recipe is so cute–no baking required! So easy to make! The perfect treat for a mermaid, beach, or under-the-sea themed party.
Oyster “Pearl” Cookies
Sometimes the best party projects are the simplest, and these little Oyster “Pearl” Cookies are the perfect example! They were so easy to put together, using just a few ingredients and taking less than 30 minutes from start to finish. And yet, despite their simple assembly, they added so much–including a perfect pop of color–to our otherwise aqua and sand colored beachy mermaid party table.
Oh, and did I mention they were delicious? Hard to go wrong with vanilla wafers and homemade cream cheese buttercream frosting!
Here is what you need:
2 boxes vanilla wafers homemade cream cheese buttercream frosting, tinted pink decorating bag with a star tip pearl-colored Sixlets (I found them at the candy store in the mall)Step 1: Sort your vanilla wafers to find ones that are not broken. Chipped ones will work for the bottom layer, but the top ones should be nice and smooth. Lay out bottom wafers on a cookie sheet.
Step 2: Place frosting in decorating bag fitted with a medium-large star attachment. (I used the #21 but there are several that would work.)
Step 3: Pipe frosting onto bottom cookies as shown.
Step 4: Place top cookie over frosting at an angle to resemble an oyster shell, then place “pearl” candy in center of frosting.
Step 5: Once cookies are complete, refrigerate to harden frosting. Keep refrigerated or in a cool place until serving time. Serve on a plate of “sand” for a cute effect. (Get the edible sand instructions here.)

These are cute, we used them for a Pearl Party…….the icing recipe is much more than you need however….I think all that is needed is 1/4 -1/2 this much……enjoy your cookies.
