One Pan Chicken & Artichokes

Looking for a simple dinner option for busy weeknights? This one pan chicken & artichokes recipe requires less than 5 ingredients! It couldn’t be easier, and is sure to become a family favorite at first bite.

I rarely make dinner recipes that my kids ask to eat for leftovers the next day. They enjoy most of my recipes and typically eat seconds, but unless it is a casserole covered in tater tots, they typically don’t want to eat it again and again.

However, this One Pan Chicken & Artichokes had them raiding the fridge at lunch and dinner time. They just keep mentioning how tasty and flavorful the chicken is. That has to be due to the fact that the chicken is marinated in the canned artichoke brine. I don’t know how the chicken picked up that much flavor so quickly, but it did and I couldn’t be happier!

One Pan Chicken & Artichokes

Here is what you need:

6 chicken breasts, trimmed and skinned
2 (12 oz) jars marinated artichoke hearts
1/4 cup grated Parmesan Cheese
Salt
Pepper

Step 1: In a large bowl, place chicken breasts and the liquid and artichokes of each jar of marinated artichoke hearts. Stir together. Cover, refrigerate and let it marinate for at 1-2 hours.

Step 2: Spray a rimmed baking sheet with non-stick cooking spray.

Step 3: With a slotted spoon, remove chicken and artichokes (removing as much liquid as possible). Place on the greased baking sheet.

Step 4: Sprinkle each side of the chicken breasts generously with salt and pepper.

Step 5: Broil on high on the middle rack of the oven for 20 minutes. Next, flip chicken breasts over, stir artichokes, and move baking sheet to the top oven rack and broil for 2 minutes. Lastly, flip chicken back over and sprinkle pan with 1/4 cup Parmesan cheese. Broil on top rack another 2 mins or until cheese and chicken are nicely browned and chicken is cooked through.

  • Chicken and artichoke could form such an excellent duo, I wasn't aware of it until I tried out this recipe! Ever since then, I have made it so many times.

  • Sounds great, but could this recipe just be baked in the oven without using the broiler? If so, what would you suggest as modifications? Thanks!

    • Yes, you can just back it at the temperature listed. The broiler is only used to make the cheese nice and crispy. :)

  • This didn't work for us at all. After the recipe was done, I made sure to check the temperature on the chicken. It was about 20 degrees until being safe to eat. I would say our chicken breasts might have been too big, but they're a pretty standard size. Also, the parmesan burned on the top, even in the 2min broil.
    We put the chicken back into the oven for 7min on 350. It was delicious!
