Slow Cooker Roasted Chicken

Nothing says love like a home-cooked meal, especially a juicy and delicious slow-roasted chicken.

And yet, who has time to spend all day in the kitchen?

Luckily for all of us, this slow cooker roasted chicken is packed with flavor but light on effort. It literally comes together in minutes, then roasts to perfection in your slow cooker–no need to even turn on the oven! And better yet, it’s a super budget-friendly way to wow your guests–or your family–with a dinner that is sure to please even the pickiest of eaters.

Here is what you need:

1 bunch of fresh parsley
1 small shallot
1 lemon
3 Tablespoons butter
1 whole chicken (4-5 lbs)
3 Tablespoons Grill Mates Chipotle & Roasted Garlic seasoning
3-4 ribs of celery

Step 1: Chop half the parsley and shallot and set aside.

Step 2: In a measuring cup add the butter, chopped parsley and chopped shallot and mix well.

Step 3: Then cut the lemon in half and juice. Save lemon halves and clean chicken, remove giblets and set aside.

Step 5: Wash celery then chop in half and place in bottom of crock pot.

Step 6: Place chicken on top of celery, breast side up, lift up the skin on breast and add the parsley, shallot and butter mixture.

Step 7: Then add lemon juice, parsley sprigs and lemon halves to cavity of chicken.

Step 8: Then sprinkle season salt to top of chicken breast.

Step 9: Add a half cup of water to bottom of crock pot and cook on low for 6-7 hours.

Step 10: Serve with your favorite sides and enjoy.
