Creamy Corn Casserole

It’s hard to find a side dish that even the pickiest eaters will embrace, but this Creamy Corn Casserole with crushed Ritz Cracker topping definitely does the trick. I originally got this recipe from one of my husband’s cousins years ago, and I’ve made it every holiday since. It’s easy and always a hit, especially with notoriously picky kids.
Ingredients:
2 10oz packages frozen, whole kernel corn, thawed and drained
1/2 cup crushed Ritz crackers
1/2 cup shredded cheddar cheese
1/2 cup whipping cream
1 egg, beaten
2 tablespoons butter, melted
1/2 teaspoon onion powder
1/2 teaspoon salt
1/8 teaspoon garlic powder
1/8 teaspoon pepper
Crumb Topping
1/2 cup crushed Ritz crackers
2 tablespoons butter, melted

Step 1: Place the corn in a large bowl. Add the crackers, cheese, whipping cream, egg, melted butter, onion powder, salt, garlic powder, and pepper. Stir to combine.

Step 2: Pour into a 1 1/2 quart round casserole dish.

Step 3: Sprinkle remaining crushed crackers evenly over casserole, then drizzle with remaining melted butter.

Step 4: Bake, uncovered, in a 350 degree oven for 25 minutes or until bubbly.
