I was always intimidated by fish until I stumbled upon this amazing recipe, and I have been meaning to share it for ages. I got the original version from my dear friend, Jenny, during a mom’s-night-out recipe swap back when we both lived in Seattle. We were so chatty that night that I only ended up writing down two recipes, but this was one of them.
In the years since, I have tweaked it just a bit. It is one of my family’s very favorite meals and it is also a fantastic—and super easy—dish to serve guests (provided they eat seafood).
The really great thing about this recipe is that it works with pretty much any type of fish or seafood. The original recipe called for halibut, which I love, but it’s very hard to get here in Florida. I have used tilapia, mahi-mahi, salmon, flounder, cod and shrimp with this recipe, and they have all turned out wonderful. The Very Best Fish Recipe Ever

Ingredients:
Here is what you need:
¾ c. shredded Parmesan cheese ⅓ c. butter, softened, plus more for greasing dish ¼ c. mayonnaise 3 tbsp. lemon juice ¼ c chopped green onions ¼ tsp. salt ¼ tsp. pepper 2 tsp. freeze-dried dill (optional) 2 dashes Tabasco sauce 2 pounds skinless fish (halibut, tilapia, flounder, mahi-mahi, salmon or cod all work great)
Directions:
Step 1: Preheat the oven broiler; Grease 9×13″ baking dish with a thin coat of butter. *PLEASE make sure your baking dish is safe for use in the broiler.*
Step 2: Mix together Parmesan cheese, butter, mayo, lemon juice, green onion, salt, pepper, dill and Tabasco in a small bowl until well blended.
Step 3: Arrange fish in a single layer in a baking dish.
Step 4: Broil fish for 8 minutes or until it flakes with a fork.
Step 5: Remove from oven and carefully spread the Parmesan mixture over top.
Step 6: Broil 2 additional minutes, or until bubbly and lightly browned. *PLEASE make sure your baking dish is safe for use in the broiler.*

Broiling is the highest setting on our ovens here in the states. 🙂

Ruth- do I turn the fish over during the 8 minutes?
Broiling is when you top heat
Depending on the age of the stove, the broiler may be in the bottom drawer with a broiler pan that slides out for cleaning… do not use this for the recipe though. If it’s a newer stove it will be on the top of the inside of oven… move rack to top spot.
Only the top oven element comes on when you broil.
I believe “Broiling” in the US is what is called “Grilling” in the UK. The food is placed a few inches below a heating element which is extremely hot and glows red all the time that it is on.

I’m in the UK and don’t have a broiler to cook with, per se, plus after reading comments about glass shattering under high temperatures, I cooked this a bit different. I used tilapia fillets and baked them at 200°C (fan assisted) for 12 minutes. Then I got rid of the water that baked off into the baking dish, covered the fish with the cheese mixture, and set the dish on to my lowest grill rack. I then grilled for 2 minutes. My grill setting has 8 temperature levels, so I just stuck it on level 5 and hoped that the glass didn’t shatter.
Just had this and it’s amazing
This recipe is the best I have ever tasted ,and I catch cook and eat a lot of sea fish
