Looking for an easy Taco Tuesday recipe? These super easy 5-ingredient tacos require NO cooking at all! They’re a perfect Tex-Mex dinner option.
Who can get excited about a flavorful and simple dinner idea that only uses 5 ingredients? I knew that would be appealing to you! Whether you are walking in the door late from work or needing to eat quickly to get the kids to soccer, these quick tacos are for you.
Although, these tacos may remind you of the typical BBQ chicken sandwich with coleslaw, they are so much better. Ingredients are always more fun in a taco, especially when you can assemble this recipe in a matter of minutes!
You will love the Mexican feel of this recipe with the added fire-roasted corn. Feel free to use any tortillas, corn or flour, as well as any size you prefer. A typical serving will be two fajita size tortillas with all fillings. But no one will blame you for wanting three!
Step 1: Remove chicken meat from cooked chicken. Shred chicken meat until you have 5 cups shredded chicken. Add 1 cup BBQ sauce and gently mix until combined.
Step 2: Drain the can of fire-roasted corn in a small colander.
Step 3: Assemble taco ingredients complete with spoons for each filling and taco holders (optional).
Step 4: In each tortilla, first add shredded BBQ chicken, then coleslaw, lastly top with a spoonful of fire-roasted corn. Enjoy! Refrigerate any leftovers.
